Lauren Manuel is currently employed with Southeast Louisiana Area Health Education Center as an Eat MoveGrow Health Educator. Lauren is happy to have recently moved back home to southeast Louisiana after living almost four years in the foothills of Tennessee’s Smoky Mountains. Lauren is a graduate of Mississippi State University and earned a Master of Science in Public Health Nutrition at the University of Tennessee in Knoxville. Throughout her academic career, Lauren studied nutritional sciences and public health focusing on gardening and cooking programs for preschool and school age students. Prior to working with Eat Move Grow, Lauren directed an afterschool care and summer camp program for school age children where she enjoyed incorporating exercise and nutrition education into day to day programming.
Lauren has a special place in her heart for teachers, because her mom is a Louisiana public school kindergarten teacher. Lauren has always enjoyed spending time in the classroom as both a student and a teacher. She has found that she especially loves learning and teaching in the garden. Lauren is excited to work with Eat Move Grow for these reasons. She looks forward to spending time getting to know teachers and students in the parishes surrounding New Orleans and connecting schools across the state with resources to grow young minds through garden based education!
In her spare time, you can find Lauren playing outside with her three much younger cousins or her Catahoula dog, Roux. Lauren also loves to paint, paddleboard, cook, and of course, spend time tending her garden.
